Now Booking Biscuit Experiences With Chef Scott Peacock
Biscuits are steeped in mystery and legend and are one of the foremost icons of Southern cooking. James Beard Award-winning Chef Scott Peacock is one of their most trusted keepers. His biscuits have been celebrated on the covers of Gourmet and Food & Wine magazines, the pages of Better Homes & Gardens and The New York Times, and on The Martha Stewart Show and TODAY. In the recent 40th anniversary issue, Food & Wine named his biscuits one of their 40 best recipes ever published.
In Marion, Alabama—the heart of Alabama’s Black Belt—Peacock is opening the historic kitchens of Reverie mansion for intimate, small-group workshops on the fine art of traditional Southern biscuit-making. In each half-day session, he will reveal the nuances of biscuit mastery and share the philosophy behind his well-honed techniques as he guides guests in creating a batch all their own. The class will feature heirloom ingredients from the Alabama land-and-farmscape that Peacock has dedicated himself to restoring, giving participants a singular opportunity to not only learn his secrets for classic buttermilk biscuits, but to experience some of the great lost flavors of the Southern canon.
Students will also have a chance to work with exclusive ingredients, including flour ground from one of the original biscuit wheats, rare antique white lammas, that Scott has been growing and working to restore to the Alabama table.
